This recipe is a comforting and simple dish that combines canned peas with a creamy, flavorful sauce enhanced by sautéed green onions and warm spices.

This dish serves 4 and is perfect as a quick side dish for any meal. It has a nostalgic, homestyle feel, ideal for anyone who loves simple, country cooking. 
  • 2 cans, ( 15 oz ) peas
  • 1/2 cup, liquid drained from peas
  • 6 green scallion onions, sliced
  • 2 tablespoons, butter or margarine
  • 2 tablespoon, flour
  • 1/2 teaspoon, salt
  • 1 teaspoon, sugar
  • 1/8 teaspoon, pepper
  • 1/4 teaspoon, nutmeg
Drain peas.  Reserve 1/2 cup liquid.  Saute' green scallions, in butter or margarine for 3 minutes.  Stir flour, salt, sugar, pepper and nutmeg into cooked green scallions.  Add liquid from peas.  Cook, stirring until thickened.  Add peas.  Heat.  Serves 4
